Product Description
Undiluted sweet potato shochu released once a year (June).
“Polish sweet potato” is prepared with white koji, the fermented moromi is distilled in a wooden barrel distiller, and the unblended whiskey is slowly aged for one year.
Although it has an alcohol content of 37 degrees, it does not make you feel that it is high, and it has a rich, sweet and deep flavor that is unique to wooden barrel distillation.
We recommend chilling and straightening or rocking.
If you drink it with water or on the rocks, you can enjoy the rich aroma of cedar wood.
It is characterized by the plump sweetness of the potato and its sharpness.
About the wooden barrel distiller
Shochu distilled with this distiller is characterized by its fragrant, full-bodied and deep flavor.
Even in Kagoshima Prefecture, there are only a few breweries that use this distiller.
■About Shirokane Sake Brewery
Shirokane Sake Brewery, founded in 1869, is one of the oldest breweries in Kagoshima.
The stone storehouse, which is the symbol of the storehouse, is said to have been the encampment of Saigo’s army during the Seinan War, and was designated as a registered tangible cultural property by the Agency for Cultural Affairs.
If you go from Kagoshima City to Kirishima City on National Route 10, you can see the stone storehouse along the national highway (Wakimoto, Aira Town) on the way.
In the brewery, the sweet potatoes are thoroughly washed and peeled before preparation, and the stems and damaged parts that cause the bitterness of shochu are thoroughly removed.
At the brewery, we call the shiny sweet potatoes that have been carefully processed by hand “polished sweet potatoes.”
It is said that making shochu into “polished sweet potato” results in a refreshing shochu with little off-flavours.
