Incorporating the brewing technology of Japanese sake “Hakkaisan”, we are doing “three steps preparation” using sake yeast and yellow koji. Sake lees are added during fermentation, and shochu that has been stored for two years or more is distilled under reduced pressure from moromi with a faint aroma reminiscent of ginjoshu.
